Christmas Dinner

What’s for dinner? Try thinking about doing something different this Christmas dinner. Baked or BBQ ham. Or have you considered baked, broiled or BBQ whole chicken with a can of beer shoved up it’s behind side.
How about BBQ pork, lamb or beef rack of ribs? Loin roast or brisket?

Served with lots of potato’s. Baked, or mash potato’s, topped off with a pat of ‘real’ butter, maybe a bit of cream cheese or Greek yogurt? Have you tried stuffing your baked potato with Broccoli and cheese?
All potato’s are not the same some types are just better for baking than others.
Don’t over look baked with a pat of ‘real’ butter and a sprinkle of cinnamon, fried or candied sweet potato’s as a special addition to any meal.

You need a lot of green, yellow and red stuff as well.
Red or green cabbage, maybe those tiny tender brussels sprouts? Steamed or sauteed with a pat of ‘real’ butter or in a bit of bacon fat and crisp bacon bits.
Red, green or yellow bell peppers stuffed with sausage and rice. Maybe you would like to stuff your peppers with small potato wedges. Have you considered using broccoli or brussels sprouts cut into quarters? Hehehe, some people even like cauliflower, collards, kale, mustard, and turnips. (me for one).

Provide lots of greens and vegetable in separate bowls so people can assemble a salad ‘they’ like best.
There are many cabbages, like red/green head and pok or bok choy, loose leaf and head lettuces to choose from.
Don’t over look red, yellow and white onion, peel and de-seed large cucumbers and tomato’s for your salads. As a special surprise an treat, add a small amount of lightly steamed asparagus tips.
Try using a red or white wine vinegar and olive oil dressing in place of a fat and salt filled bottled salad dressing. Served with a slice of fresh hard crust bread on the side. Adding a tiny bit of hard cheese (feta) sprinkled in top of you salad.
Salads can and should be much more than a chunk of that tasteless iceberg lettuce!

You can never have to much or to large an assortment of green, red, yellow and white stuff on your Christmas table.

You may have noticed that I omitted carrots. I find that 1 carrot a year is all that I need and I get that one at thanksgiving.

Radish, beet, parsnip or turnip as is a grating of fresh ginger or a bit of lemon zest is a nice taste changer to add to a salad dish.

Celery in moderation is always a good addition to many dishes as well as to salads. Use only the very tender top 1/2 of a celery stalk or be sure to remove the tough strings from the bottom half of a celery stalk before serving.

Grilled to perfection debweeks said ” One of our favorite meals from the grill is grilled pizza. Green and red toppings would make it very Christmaslike!
We don’t put pizza sauce on grilled pizza. Just rub olive oil and garlic on the crust. Grill both sides of the dough to begin the cooking process, put on the toppings and grill until cheese is melted. Some wood chips will give it a nice smoky flavor and with some greens for a salad, would make a wonderful meal anytime of the year

  1. If you can get your hands on a country ham, I have a suggestion that will rock your socks. Soak it in fresh water every day for 3 days. Then, cook it in apple juice/cider (whichever is easiest to acquire). It will fall off the bone and you won’t even care if you have anything to eat with it.

  2. Sorry but its got to be Roast Turkey, roast potatoes, roast parsnips and carrots (with a touch of cumin), steamed cabbage and cauliflower, otherwise it wouldn’t be Christmas!! And cranberry sauce of course. We are very traditional over here in the UK.

    • Re debweeks – I never grilled a pizza, I’ll bet it is extra good tasting if you pitch in a package of mesquite chips to add a smoked flavor to your pizza
