Happy Independence Day America

With tomorrow being the 4th, I thought about all the burned burgers and hotdogs found at almost every BBQ event.

Texas Style BBQ using a Dry Rub
On the day before you will be eating, pat the dry rub all throughout the meat, making sure to rub it into every fold. Place the meat in a plastic bag and refrigerate overnight.

First thing in the morning, remove from the refrigerator and let it sit on the kitchen counter so it will get closer to room temperature. In the meantime, get the fire to your barbeque pit going to about 200 degrees Fahrenheit. After an hour or so, when you have the mop sauce, and everything else is ready, place the brisket on the opposite side of the fire pit (the cool side).

Place the meat fat side up so the fat helps baste the meat. Close the lid of the barbeque pit.
Maintain a temperature between 165 and 195 degrees, Never exceed 210 degrees and cook the beef for 1 to 1 1/4 hours per pound of meat. About every 45 minutes to an hour, when you feel like you just have to peek, go ahead and dab some beer mop sauce all over on the meat.

After done, shut down your fire, remove the barbequed beef, and let it sit for 20 minutes. Then trim off the thickest parts of fat and slice them thin against the grain of the meat.
* Serve warm barbeque sauce or garlic butter dipping sauce on the side. Never drench the meat in sauce. A little goes a long way.

Texas Dry Rub Recipe
Ingredients:
3/4 cup paprika
1/4 cup quality chile powder
1/4 cup ground black pepper
about 1/4 cup brown sugar – more or less to your taste
1/4 cup salt or less if on salt restricted diet
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon ground cayenne pepper
Mix the spices thoroughly in a bow. This makes 2 cups of dry rub. You can store any dry rub you do not use in an air tight jar for up to 3 months.

Beer Mop Sauce Recipe
Ingredients:
1 12 ounce can of beer
1/2 cup {2 or 3 large lemons} fresh lemon juice
1/2 cup olive oil or canola oil
1/2 medium sweet white onion, minced
2 large garlic cloves, minced
2 tablespoons of Texas Dry Rub (from above)
1 1/2 teaspoons Worcestershire sauce
Mix everything together. Apply mop sauce with a small string mop made for barbeque.
You can use a pastry brush if you want.

Perfect salad for your 4th BBQ – Garden Fresh–Greek Style {horiatiki} Salad
*3 tablespoons extra virgin olive oil
*1½ tablespoons lemon juice
*1 clove garlic—minced {optional}
*½ teaspoon dried oregano
*¼ teaspoon salt {optional}
*¼ teaspoon freshly ground black pepper, and extra for garnish {Optional}
*3 tomatoes—cut into wedges
*¼ red onion—sliced into rings
*½ to 1 cucumber—sliced into thick half-moons de-seed if cucumbers are large
*½ green and or red sweet pepper—julienne
*4 oz (120g) feta cheese—cut into small cubes
*16 kalamata olives

Method: Put olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine.
PLACE the salad ingredients in a large bowl, add feta cheese on top.
POUR the dressing over the salad and toss gently to combine just before serving.
Garnish the Greek salad with a little freshly ground black pepper.

Serve with Fireworks, Texas Style BBQ Beef, Buffalo Hot Wings and Cold Beer
2 pounds potatoes, cut into bite size cubes, boiled until fork tender – Cool to stop cooking with running ..cold water
3/4 cup mayonnaise
1 1/2 tablespoon yellow mustard
3 tablespoons red wine vinegar
1 small or medium size sweet white or red onion, diced
1 large de-seeded dill pickle, diced
Optional – 2 or 3 sweet pickles diced -replace dill pickle with sweet pickles
Optional – 1/4 to 1/2 cup Red and or Green sweet bell pepper
4 hard boiled eggs, diced
1 rib celery finely sliced
salt & pepper to taste
Garnish with a sprinkle of fine ground sweet red Paprika
Carefully Mix potato salad in large bowl, cover, chill and serve cold.

Basic Buffalo-wings recipe
Serves 4 (normal people) you may need more, much more!
Ingredients
12 whole chicken wings
3 ounces unsalted butter or(BBQ sauce)
1 small clove garlic, minced
1/4 cup hot sauce (Your choice, mild, hot or smoking hot)
1/2 teaspoon salt
Directions
Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.

Remove the tips of the wings. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. It’s important to do this step, Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.

Preheat the oven or grill to 425 degrees F. Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.

While the chicken is roasting, melt the butter(BBQ sauce) in a bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.

Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

Wimpy city boys choose Louisiana hot sauce 9 out of 10 times.
Serve Buffalo wings with a large bottle of Louisiana hot sauce on the side. Be sure to provide ice cold beverages of your choice. Louisiana hot sauce has a wonderful taste but is rather mild tasting, but, hot enough for most wimpy city boys.


Tough guys may choose Tabasco hot sauce Tabasco sauce has a wide assortment of hot sauce styles and flavors. It’s a bit hotter than Louisiana hot sauce. If you are unfamiliar with using Tabasco sauce, taste a ‘small’ amount ‘Before’ dousing your Buffalo wings with this hot sauce.

  2. Great recipes! Can’t wait for dinner now. Many years ago I had a friend who got mad at me for, “…always touching the meat!” Well, how else are you going to get all that lovely flavor into it? 😉
