Cabbage – Green or Red – Not Just For The Germans And Russians Any More

Cabbage and other garden fresh Cole (cruciferous) vegetables will soon be found in abundance at supermarkets and farmers markets.

WHfoods.com has more information about cabbage than almost any of us care to know. Cabbage and all of it’s relatives, Brussels sprouts, Broccoli, Kale, Bok Choy. All the cruciferous vegetables are tasty as well as healthy for you foods.

The main consideration when cooking any of the cruciferous vegetables is Do Not over cook them. They should not be cooked until they turn to mush! Blanching, broiling or steaming are good ways to cook cruciferous vegetables like cabbage. They should retain their crunchy texture. It may take as little as 5 to 8 minutes cooking time for cruciferous vegetables. Don’t Over Cook Them!

  1. I was going to start a fall garden this year but with the drought and the 100 degree temps untill this week, I decided against it. It is finally raining and cooling off but too late to plant before frost if other years are an example.

      Texas A&M university said “Colder temperatures (26-31 degrees F.) may burn foliage but will not kill broccoli, cabbage, cauliflower, chard, lettuce, mustard, onion, radish.
      Cold weather champs(can survive) temperatures as low as 10 degrees, are beets, Brussels sprouts, carrots, collards, kale, parsley, spinach and , and turnip.

  2. Cooking red cabbage got me banned from the kitchen years ago. I am now allowed back in with supervision. I was making a quick lunch with Top Ramen. To add some nutrition (Top Ramen begs that question!) I would add some frozen vegetables, or whatever I found pieces of in the veggie drawer. That day I found a few slices left of red cabbage. After dropping these into the water, the whole pot turned turquoise blue! It tased fine, but did look like I had poured Tidy-Bowl into my soup. ๐Ÿ™‚

      I’m not a big fan of sauerkraut, but with that said, fresh home made wins hands down to that caned supermarket cabbage they call sauerkraut!
