Quick And Easy – Cucumber Dill Relish

This is a really fast and easy cucumber relish.
Dill Pickle Relish: By arkansasfarmerette2012

2 cups chopped cucumber
1 cup chopped small green tomatoes
1/3 cup red bell pepper
1 cup cider vinegar
3 tsp. dill seed
2 cloves garlic, finely minced
1 1/2 tsp. canning salt

Place all ingredients in an enamel or stainless steel pot.
Bring to a boil, then reduce heat to a simmer.
Simmer for 10 minutes.
Ladle into jars and seal.
Place in boiling water bath for 15 minutes (20) minutes above 3,000 feet altitude.
Remove, sit on a towel, and wait for the popping sealing sound.

Pobept said “For a more southwest flavor add:”
1 or 2 tsp whole mustard seeds
1/2 tsp whole celery seed
1 small yellow onion diced
1 whole hot red in each pint jar of relish
salt green tomato’s and allow juice to drain away (about 1 or 2 hours), rinse in cool water to remove salt before cooking relish
