Tomato’s, Red Onions, Cucumbers and Feta Cheese

For this salad use only very fresh home grown herbs and vegetables. It simply does not taste as good when made from market vegetables that were picked green in Mexico or Chile, shipped thousands of miles and ripened in shipping boxes and on your market display counters.

Garden Fresh – Greek Farmers {horiatiki} Salad
*3 tablespoons extra virgin olive oil
*1½ tablespoons fresh lemon or lime juice
*1 clove garlic—minced {optional}
*1 tablespoon fresh finely chopped oregano or ½ teaspoon dried oregano
*¼ teaspoon salt {optional}
*¼ teaspoon freshly ground black pepper, and extra for garnish {Optional} use sparingly
*3 tomatoes—cut into wedges
*¼ red onion—sliced into rings
*1 cucumber—sliced into thick half-moons de-seed if cucumbers are large
*½ green and or red sweet pepper—julienne {optional}
*4 oz (120g) feta cheese—cut into small cubes
*16 kalamata olives are best, stuffed green or small pitted black olives will work

Note: Some Greeks add what ever garden fresh greens they may have to this salad. What ever greens you may decide to add to this salad, Do Not put any of that tasteless worthless ‘Ice Berg’ head lettuce in this salad.

Put olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid and shake to combine.
Place the salad ingredients in a large bowl, add feta cheese on top.
Pour the dressing over the salad and toss gently to combine just before serving.
Garnish the Greek salad with a fresh mild pepper or a little freshly ground black pepper.

Now for the fresh home grown ingredeants.

Tomato basics, determinate varieties of tomatoes, also called “bush” or patio tomatoes, are varieties that are bred to grow to a compact height (approx. 4 feet). They stop growing when fruit sets on the terminal or top bud, ripen all their crop at or near the same time and then die.

Indeterminate varieties of tomatoes are also called “vining” tomatoes will grow and produce fruit until killed by frost and can reach heights of up to 10 feet although 6 feet is considered more normal. They will bloom and set new fruit and ripen fruit throughout the growing season.

I usually plant mostly Porter, Improved Porter and Porter Cherry tomato’s. This heirloom tomato is very drought and heat tolerant and does well in our hot dry summers in Southwest Oklahoma. Porter is a good all around heirloom variety that works well, as a fresh slicer, juicer and for canning as well.

Onions and garlic are so easy to grow, plant, water, harvest when the tops start dieing.

Fresh Oregano

Oregano is an easy to grow herb. Grow it as a indoor potted plant, potted grow on your porch or patio or it is just as happy grown in the garden.

With so many varieties of cucumber to choose from, it is difficult to decide which one to plant. There are a few varieties marketed as patio or bush types that will work well if you are limited on space. I plant an old heirloom variety called straight 8. Growing on a trellis to conserve space. It produces well all summer, works as a slicer, eat them fresh from your garden, or pick small and tender for making pickles.

Pest and disease problems are few if you keep a sharp eye on your garden and treat at the first signs of a problem. Washing your plants weekly with a light dish soap mix using a hose end sprayer will prevent many insects and disease’s from becoming a problem in your garden.
